Bakery vs Homemade MATCHA MOCHI CAKE: Happy Sunday! September is a full month of celebration for me! First of all, it's my birthday month but also it's when my husband proposed and then we got married the following year! So I had to whip up a cake. But this one's a little different - it's a cookie inspired one...a Chocolate Chip Cookie Layer Cake with a rustic twist! My Wedding Video: 3 Yummy Snacks: My VLOG channel: Chocolate Chip Cookie Layer Cake Recipe: 1 Cup Sugar 1 1/2 Cups Brown Sugar 1 1/2 Cups Melted Butter (unsalted) 2 Egg Yolks 2 Eggs 1 Tbsp Vanilla 1 Tsp Baking Soda 1 1/2 Tsp Kosher Salt 3 3/4 Flour 3 Cups Chocolate Chips Buttercream: 1 Cup Unsalted Butter, Room temp 4 Cups Powdered Sugar Pinch of Salt 1/4 Cup Milk 1 Tsp Vanilla Olive Twigs Flowers Directions: In a bowl mix the Sugar, Brown Sugar, and Melted Butter. Then add the Yolks, mix again, then the Eggs, 1 at a time, mixing constantly until a ribbon texture forms. Then add the Vanilla, Baking Soda, Salt, Flour, and Chocolate Chips, mixing until a nice batter forms. Prepare the cake layer pans with parchment paper. This recipe can make up to four 8-inch layers. Bake the cake layers for 25 minutes at 325º F. Then let them cool completely. Remove from the pan. In another bowl whip the butter until fluffy. Then add the Powdered Sugar, Salt, Milk, and Vanilla, and whip until the Buttercream forms. Pipe the buttercream between the each cookie layer. I piped twice around the edges so there would be spill-over for that rustic quality. Then decorate with foliage.
