Boiled eggs topped with freshly made guacamole mixture. GUACAMOLE DEVILED EGGS Ingredients 1 medium avocado 4 boiled eggs 1 small onion, finely chopped 1 small tomato, finely chopped 1-2 green chillies, finely chopped 2 teaspoons lemon juice 1 tablespoon chopped fresh coriander leaves Salt to taste Fresh parsley springs for garnishing Method 1. Halve the eggs. Remove the yolks in a bowl and place the egg white shells on a plate. 2. Halve, deseed the avocado and scoop out the flesh in the same bowl. Add tomato, onion, green chillies, lemon juice, coriander leaves and salt and mash well using a fork into smooth paste. 3. Fill a piping bag fitted with a star nozzle with the guacamole and pipe out into egg white shells. 4. Serve garnished with parsley sprigs.
