CLEANING PORCINI MUSHROOMS The porcini mushrooms are highly prized for their rich taste and for the nutty flavour they add to dishes. Today you'll learn how to prepare them for cooking. With a sharp, non-serrated knife, remove the dirt from the bottom of the stem. If the mushroom is quite clean, wipe off any remaining dirt with a brush or a cotton cloth. Take the mushroom and gently twist the cap to separate from the stem. Take care not to break the cap or the stem. If the mushroom is still dirty, rinse under cold running water. Keep in mind that it's best not to wash mushrooms, because they will soak up the water. So rinse the mushrooms quickly, do not leave to soak. Finally, pat the mushrooms dry with a cloth or kitchen paper, and wipe off any remaining dirt. Now cut the mushrooms: place the stem and the cap on a cutting board and cut into thick or thin slices, depending on the recipe. If the mushroom is small, you can slice it whole. The porcini mushrooms are ready for cooking!
