TYING A ROAST Tying a roast ensures that your meat cooks evenly and retains its shape. Here's a quick and easy method. Place the meat on a cutting board and trim off the excess fat and gristle, then form the framework: wrap the string around the roast lengthwise and secure with a knot, leaving one end of the string longer. Now wrap it around the other side, and tie a knot at the other end. This makes a base for tying your roast. Take one end of the string and create a loop: hold the string in place with your fingers, then use your hand to twist the string around itself a couple of times, and pass the meat through the loop. Pull the string upwards to tighten the loop. Now repeat until you reach the end of the roast. At the end of the roast, tie a knot to secure the string. Your roast is ready for cooking! Now, you can tuck the herbs under the string
