ROYAL ICING The royal icing is a soft mixture of egg whites and powdered sugar, used for decorating cakes and cookies. You can use food colourings to make coloured icing... let's see how to do! For enough icing to decorate 60 cookies, you'll need: 1 ¼ cups (150 g) of powdered sugar, 2 tbsp (30 g) of egg whites, and food colourings. Place the egg white in a bowl and beat with an electric beater until soft peaks form. Now gradually beat in the sifted powdered sugar, to avoid forming lumps. If you want to colour your icing, add enough powder, liquid or gel food colouring, to get the desired colour. Spoon the icing into a disposable pastry bag, cut off the tip and decorate as you like; you can also use a traditional pastry bag fitted with a small, plain nozzle.
