Beetroot in a smoothie? You bet! (RECIPE BELOW) Mix up your morning smoothie with this vibrant fruit and veg combination. Smooth and creamy it’s a delicious start to the day or a great filler between meals. Place 1 cup frozen mixed berries, 1⁄2 cup (125ml) orange juice, 1⁄3 cup diced cooked beetroot, 1⁄4 cup (70g) Greek-style yoghurt, 2 tbs oats, 1 tsp honey and 2-3 ice cubes in a blender or food processor and blend or process until smooth. Pour into a chilled serving glass. Serve immediately. Put a tropical twist on this smoothie by swapping the berries for 1 cup frozen chopped mango or pineapple.
